Anyone knows that rock candies have a great taste. A fact that is less known though, is that rock candies are extremely easy to make. You can start right away, as I am pretty sure you already have everything you need to make that delicious rock candy.

Get a jar. Take a cotton thread - a thick one, preferably. Tie the thread to a normal pencil. Add a small paper clip to the other end of the thread. Put the pencil across the mouth of the jar. Ideally, the thread's end (with paper clip) should be at around 1 inch from the base of the jar. The paper clip will weigh down the thread a bit and the thread will hang straight. The big idea here is to help the candy maker to identify the thread's height. Soak the thread in water a bit and start rolling it into the granulated sugar. Put the thread aside to dry while you process the sugar syrup.

Choose a recipe for sugar syrup and make it. Wait till it's well done. Now pour it in the jar. Plunge your sugared string in it. Make sure it is above the base. Cover the jar. Using a paper towel makes sense here. The sugar crystals will start forming in 2-4 hours. Allow your rock candy to grow but don't let it overgrow. Don't let it touch the jar's walls. Enjoy it!

It's time for another simple recipe - it's about lollipops! Prepare it using easy ingredients like fresh water, granulated sugar and sweet corn syrup. You need to mix 3.5 cups of granulated sugar, 1.5 cups of sweet corn syrup and a cup of fresh water. When you've mixed them properly, put the pot over a medium heat. The sugar here has to properly dissolve. Keep stirring the mixture. Allow all these ingredients to melt altogether. Increase the heat. Let it boil but don't stir until the thermometer hits the 300° F mark.

Take your pan off the heat and add a little bit of flavor and/or food color. This will make the candy to appeal to the guests. Be careful while mixing. Put the candy in the candy mold. Avoid touching the candy mixture - you could get burnt!

This is the ideal time for adding lollipop sticks while those candy molds cool onto the counter. The candies are to be set as well as cool down entirely. While the candy gets cooled down, it should harden in a natural way. It's time you turn over the candy mold. Tenderly pop those candies off their mold onto wax paper. Other types of soft surfaces (like a towel) would also do. Just wrap up the cooked candies with cellophane.

Following some secrets will help you make better candies. For instance, you should boil up the sugar till it reaches 300° F. Insufficiently hardened candies become sticky as well as messy. A common mistake that typical candy makers commit is stirring the sugar solution for too long, even though it has reached the target temperature. You should avoid this type of risks. Also be careful about flavoring and coloring the blend into the little bowl. Putting it the other way around, just as you take the sugar solution away from the heat, cautiously pour a little bit of flavor and color mixture into the pot rapidly and make sure you stir till its color is even. Also, avoid stirring the for more than 2 to 4 seconds.
